A former retail executive opened an organic fast food chain that cooks with coconut oil...claims that it's high in vitamin A... 

There is no vitamin A in coconut oil. In fact, there are no appreciable amounts of any vitamin or mineral in coconut oil (same as for most oils, although some have a small amount of vitamin E).
